Varietal Honey
Some honeys can candy within 6 months and other can take years. Candying
is a sign of honey that is not over processed. IT IS NOT A SIGN THAT IT
HAS GONE OFF!!!
- Store your honey in a cupboard. Do not refrigerate honey. Cold temperatures hasten
granulation/candying
- If your ABD honey
candies stand in warm water (<40 degrees), stir occasionally
until liquid

You can use a microwave to warm the candied honey, just be careful not to over
heat

If using candied honey in cooking, spoon out desired amount and the heat of the
cooking will re-liquefy the honey
- Using
ABD’s Honey to substitute sugar, use 1/3 less honey. If the recipe
asks for 1 cup of sugar, use 2/3 cup of honey
Creamed Honey
- To make the creamed honey easy to spread, the warmer the honey gets the
softer it gets
- If creamed honey is subject to, to much heat it can turn back to liquid honey.
- If the creamed honey is to soft put it back in the
fridge and it will firm up
